Easy Chicken Curry

So I took a bit of a break from posting this last month… I was studying for the dreaded GRE!!! For any of you who haven’t taken this horrid test that takes like 5 hours with extremely minimal breaks, consider yourself lucky…. After the test my brain felt so numb it was like it had gone through a blender…

I called my mom after while sitting in my car, she told me to go buy myself an ice cream cone and lick it longingly… 🙂 my mom is the best!!

But other than studying and work the summer has been pretty sweet.. Minnesota can be a real B when it comes to weather but overall not too bad this summer. If you’re anything like me you get annoyed when the weather is in any type of extreme.
I absolutely loathe when it is HOT and I hate it when it’s really really cold… But I would rather it be cold obviously cause its easier to warm up than it is to cool down and I’m naturally a really sweaty person.

Eric and I recently went to one of his good friends wedding and it was BLAZING out…. I wouldn’t be surprised if it was 100 degrees that day. Now I know that may be cool to someone who lives in like Texas or something but that it WAY TO HOT for this Minnesota girl. You would never know that my mom came from an island!!

So recently I asked Eric to make me something yummy for dinner. He’s made me Chicken Stir Fry before and that was bomb!! And we made our lovely Chicken Tortilla Soup together before…

I came over and he already had some stuff diced up and he got me a beer. Naturally I sat back talked with his brother and started taking snap chats of my feet resting up on another chair, cause I’m a brat. I didn’t even do the dishes, like he does for me when I cook dinner. All I did was make rice…. which is literally the easiest thing in the world to do but for unknown reasons to me he refuses to make rice if I’m over.

…And the award for “Worst Girlfriend in the World” goes to…. 🙂

This lovely guy made me a simple but absolutely delicious Chicken Curry…

I had never had chicken curry before… He spooned me up some rice and some of the curry mixture and I inhaled it! It was so good… I don’t even remember what life was like before this dish and I don’t want to!! So here we are… I’ve added my own flare to it but originally this was Eric’s recipe.

Easy Chicken Curry

Serves 4

Ingredients:

3 tablespoons butter
1/2 onion, diced
2 1/2 teaspoons curry powder
3 tablespoons flour
1 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon ground ginger
1 cup chicken broth
1 cup almond milk*
2 1/2 cups chicken, cooked and cubed
1 cup dry basmati rice, cook according to package
2 roma tomatoes
1 green bell pepper

*you can use any type of milk, nutrition fact may vary

Instructions:

Melt butter over low heat in a sauce pan

Sauté onion over and curry powder with melted butter for 2 mins. Blend in flour, salt, sugar and ground ginger. Heat over low heat until mix is well combined and smooth. Remove from heat and whisk in chicken broth and almond milk.  Bring sauce to boil while continuously whisking. Lower heat to medium, continue stirring until thickened. Add chicken, bell peppers and tomatoes. Spoon curry sauce over rice once chicken is heated through.
