Raise your hand if you like tacos… Yea that’s what I thought. Honestly I wish I had 5 more hands just so I could raise them! — and eat more tacos with those hands. I just love tacos. Mexican food in general is one of my favorite things to eat. I just can’t get enough of it.
I find myself lately having a hard time getting away from Mexican food.. if it doesn’t have perfectly seasoned meat, cilantro, avocados and pico de gallo, I don’t want anything to do with it!
When the boyfriend told me at the last minute that he needed something to bring to a pot luck, I decided to whip out this bad boy. Side note: I had previously brought guac for his lovely night shift co workers like within the last week so that was a no go.
No one likes a repeater…
7 Layer Taco Dip
1 1/2 16 oz cans refried beans
16 oz sour cream
1 packet taco seasoning (1/4 cup)
about 3 cups of guacamole – my recipe coming soon!! – I use 4 avocados in my guac
2 cups Mexican blend cheese
2 cups halved red and yellow baby tomatoes
2 cups salsa- any brand is fine
small bag of shredded iceberg lettuce
red onion, green onion and cilantro for topping
I was so excited while I was making the dip that I forgot to take the salsa layer pic! hahah.
- In a 9×13 size pan start to spread out the refried beans for the first layer— you may need to add a little water to them to help them thin out and spread better! The beans straight from the can are kinda hard to move around and might break your chip other wise….And no one like a broken chip
- Mix together sour cream and taco seasoning- set aside
- Layer guac- either homemade or store bought, sour cream mixture, salsa, lettuce, cheese
- Then top with red onion, green onion cilantro and baby tomatoes
